Lao-Tzu said: “A journey of a thousand miles begins with a single step” and this website is one such journey.
For a very long time I dreamt of creating this website, but due to my working hours, I was left with little time for personal activities. April 2020 marked the beginning of the Chef Louis Nel project, the country was under lockdown due to the pandemic, and with restaurants closed I suddenly had time on my hands. With the help of my sister (owner at WeaverWorx web design), this website became a reality.
I was at home for only 1 month, but it gave us a considerable start towards this project. This was to be the first step in our journey of a thousand miles. Being back at work brought back the obvious time constraints, but when eating an elephant, take one bite at a time.
This website will serve as my personal recipe collection which I want to share with you. I make use of all these recipes regularly and therefore they evolve from time to time. For instance in the case of carbonara: In the restaurant, I always use 1 whole and one egg yolk, but personally, I prefer using only the yolks when making pasta carbonara for myself. In this way, the actual recipes on the website might change and evolve over time. You will find some old-time favourites like Crème brûlée, but the method will differ from the traditional way of making it.
Also available to you will be an ever-growing glossary of herbs, spices and flavourings. I will also try to demystify the jargon in restaurant kitchens and tell stories from the underbelly of our world. We are also working on an online store and cooking courses. Development is a bit slow due to long working hours and family commitments, but I am positive that we will reach our goal.
