Ingredients
- 300 g broccoli florets
- 1 clove garlic
- 1 pinch chili flakes optional
- 1/2 onion chopped fine
- 150 g smokey bacon cut into cubes
- 25 g butter
- 1 tbsp olive oil
- 25 g all purpose flour
- 200 ml cream
- 100 ml chicken stock
- 2 egg yolks
- 50 g mature cheddar
- 1 roll puff pastry 400g
- 1 egg beaten for egg wash
Instructions
- Preheat your oven to 180°C (350°F).
- In a large pot of boiling salted water, blanch the broccoli florets for 2-3 minutes until they are slightly tender. Drain them and set aside.
- In a large skillet or frying pan, heat the olive oil over medium heat. Add the cubed bacon to the skillet and cook until it becomes crispy and golden brown. Remove excess fat if needed.
- Add the minced garlic, chopped onion, and chili flakes. Sauté for about 2-3 minutes until the onions are soft and translucent.
- Add the butter and saute until melted. Stir in the flour to create a roux. Cook for 2-3 minutes while stirring constantly. This insures that the roux is cooked through, leaving no floury taste in the sauce.
- Gradually whisk in the heavy cream and chicken stock to the roux, creating a smooth sauce. Continue to cook and whisk until the sauce thickens, which should take about 5 minutes.
- Add the grated mature cheddar cheese to the sauce and stir until it's fully melted and incorporated. Season the sauce with salt and pepper to taste.
- Remove from the heat and allow to cool for about 10 minutes.
- Whisk the egg yolks and add to the sauce while stirring vigorously.
- Add the broccoli and combine.
- Line a pie dish with the ready-made puff pastry.
- Pour the broccoli, bacon, and cheese mixture into the pastry-lined dish. Brush the edges of the crust with egg-wash and and cover the pie with another sheet of puff pastry. Trim the edges off with a rolling pin and crimp them together. Brush the pie with egg-wash.
- Pierce the pie top with a fork to create air holes for steam to escape.
- Bake the pie in the preheated oven for about 25-30 minutes, or until the pastry is golden brown and the filling is set.
